Our meat is butchered by Nicky’s brother, Pud, who began his apprenticeship alongside their father as a teenager. Their dad still assists where possible, sharing decades of knowledge in traditional butchery and smallgoods production.
Every carcass is carefully selected and processed, and we pride ourselves on using as much of the animal as possible — including the hide, bones, and trim across other parts of our business — honouring our strong nose-to-tail philosophy.
